Coffee is one of those small things that quietly shapes a trip. Sometimes I really do plan my travels around coffee shops, because I know how much better my days are when they start with a great cup. So when I landed in Valencia, Spain, I came prepared.

How I Test a New Coffee Shop While Traveling

When I walk into a new café, I almost always order something simple first—usually a cortado. Equal parts espresso and steamed milk. It’s the easiest way to tell if a place actually knows what it’s doing.

You can’t hide when the drink is that simple.

That’s my baseline.

Singular Coffee

Singular Coffee was very close to my apartment, so it became my first stop almost by default—and it turned out to be a great one.

On my first visit, I ordered their miso caramel latte and a smoked salmon croissant. The flavor of the latte was really good, but it was a little sweeter than I usually go for. I’m not typically a syrup-in-my-coffee person, so it was a bit of a risk—but I’m still glad I tried it.

I had also been seeing their matcha beverages all over social media leading up to the trip, so on my second visit—despite it being freezing outside—I ordered an iced mango matcha. It was bright, creamy, and really well made.

The owners were also genuinely warm and happy to give local recommendations, which made the place feel even better. Singular absolutely earned its spot.

Blackbird Coffee (The One I Didn’t Plan For)

On our second day in Valencia, we randomly walked past Blackbird Coffee.

Tiny. Take-out only. No hype (at first).

I ordered a café con leche, and it was immediately clear this place took coffee seriously. Smooth, clean, properly extracted. A well-executed coffee doesn’t need sugar—and this one didn’t.

I ended up coming back later in the trip for another café con leche and a slice of their vegan banana bread, and by then it was obvious: this was my place.

This was the one I kept going back to.

Goat Coffee Store (A Last-Day Win)

On my last day in Valencia, I happened to walk past Goat Coffee Store, which had been on my original list, so I took it as a sign.

It’s another small, take-out-only café, but the quality was immediately there. I ordered a cortado, and it was excellent—strong, smooth, and beautifully balanced. They use Minor Figures oat milk, a well-known specialty brand, which always matters when you care about how milk-based drinks are made.

The Coffee Shops I’d Actually Send You To In Valencia, Spain

I went to several cafés in Valencia. Some were good. But three stood out as places I’d confidently recommend if you care about great coffee:

  • Blackbird Coffee

  • Singular Coffee

  • Goat Coffee Store

They were consistent, well made, and run by people who clearly cared about what they were serving. As a travel advisor, this is the kind of detail I pay attention to when recommending neighborhoods and daily rhythms to clients. Great coffee might seem small, but it often shapes how a trip actually feels.

What This Taught Me About Coffee (and Travel)

I came to Valencia with a plan.I left with a favorite I never expected. That balance between planning and spontaneity is something I think about a lot when I travel — and it’s similar to what I wrote about in my post on The Most Underrated Souvenir Shop in Valencia.

Singular was exactly what I hoped it would be.Goat was a great last-day surprise. But Blackbird—the one I hadn’t researched at all—ended up being my go-to.

So yes, save a few coffee shops before you arrive.Do a little research.

But also leave space for the ones you haven’t heard of yet.

And that unexpected stop ended up shaping my days in Valencia more than any list I made.

If you want this kind of thoughtful, well-paced experience applied to your own trip — from where to stay to how your days actually flow — this is exactly how I approach custom travel planning.
